A steel ice, or sugar cleaver in the shape of a horse. Decorative cleavers, of this type, were used in the confectioner’s kitchens for chopping the cones of sugar or the huge blocks of ice. This one is well shaped and the steel is hand forged. The handle is made from wood and has brass fittings. The cleaver is relatively light in weight and it dates from c.1880. It is in excellent condition but has obviously seen much use as the blade is thin due to continued sharpening.
